Mi az a Mad Honey?
It sounds like a myth until you understand why it exists. Mad honey has been known for thousands of years: ancient Greek texts mention it from the Black Sea region, Nepali mountain communities have harvested it for centuries, and Turkish villages in the Kaçkar Mountains still call it "deli bal". It's nature doing something remarkable in a very specific place, at a very specific time of year, when wild bees called Apis laboriosa forage on rhododendron flowers. This guide explains what it is, where it comes from, how it's harvested and how to spot the real thing.
Az egyszerű válasz
Mad honey is real honey. The difference is where and what the bees forage. In certain mountain regions, mostly Nepal's high-altitude forests and parts of Turkey's Black Sea coast, wild bees collect nectar from specific rhododendron flowers during short seasonal windows. Naturally occurring grayanotoxins from that nectar carry into the honey. We measure them in every batch.
A grayanotoxinok tudománya: eredet és hatásmechanizmus
Beszéljünk a grayanotoxinokról úgy, ahogyan egy toxikológus tenné, nem misztikusan, hanem a mechanizmus alapján.
A grayanotoxinok (GTX) természetben előforduló diterpenoid vegyületek, amelyek bizonyos rododendronfajok nektárjában és pollenjében találhatók, különösen a törökországi R. ponticum, valamint a nepáli R. campanulatum és R. thomsonii esetében. Ezek a növény kémiai védelmi rendszerét képezik, amelynek célja, hogy elriassza a növényevőket a virágok elfogyasztásától.
De a grayanotoxinokat nem csupán a létezésük teszi érdekesé. Hanem az, ahogyan hatnak.
A méz ritkasága és változatossága
Grayanotoxins aren't mystical. They are natural plant substances from rhododendron nectar, and the amount differs per batch. That's why we test every batch and give one clear limit: up to 5 g a day, less than one level teaspoon, for adults only.

Honnan származik a Mad Honey?
The best-known mad honey comes from the high-altitude forests of Nepal, where the Gurung people and other mountain communities have harvested it for centuries. This isn't beekeeping. It's wild harvesting from cliff faces, and one of the most dangerous forms of honey collection in the world. The honey hunters leave their villages before dawn with rope, bamboo ladders and woven baskets, and hike for hours, sometimes days, to cliffs where the giant Himalayan honey bee (Apis laboriosa) builds its nests. They build rope ladders on site, descend 30 to 60 metres while smoke from green rhododendron branches keeps the bees back, cut sections of comb with long bamboo poles and lower them in baskets. Then they carry everything back down the mountain. The bees nest on south-facing cliffs, usually between 2,500 and 3,000 metres, near wild rhododendron forests that bloom in early spring. You can't farm this. You can only find it, harvest it and hope the bees come back next year.
Parts of Turkey's Black Sea region, particularly around the Kaçkar Mountains, also produce mad honey. There, Rhododendron ponticum grows in dense thickets, and beekeepers place hives near these areas during the bloom. Local communities have known it for centuries as "deli bal" (crazy honey). Turkish mad honey usually contains less grayanotoxin than wild Nepalese honey, and we test it per batch as well.
Darker and more intense than everyday honey: earthy and slightly bitter, with a warm finish at the back of the throat. Because we never blend, colour, texture and taste differ from batch to batch. Raw honey can also crystallise over time; that is natural.

If you're looking for honey that tastes exactly the same in every jar, mad honey isn't it. It's wild-harvested and seasonal, and we never blend, so every batch differs a little in colour, taste and grayanotoxin content. That's why every batch has its own lab report, while the limit stays the same: never more than 5 g a day.
Not recommended for children, during pregnancy or breastfeeding, for people with heart or blood pressure conditions, or if allergic to honey.

What is Real Mad Honey? Real Mad Honey is raw, wild-harvested honey from Nepal with naturally occurring grayanotoxins from rhododendron nectar. We measure the grayanotoxin content of every batch. What makes Real Mad Honey different? Real origin (named harvest regions). Batch-level lab reports for grayanotoxin content. A rejection standard (we don't buy batches outside our specification). One clear limit: never more than 5 g a day, for adults only.
What does mad honey taste like? Darker and more intense than everyday honey: earthy, slightly bitter, with a warm finish. Colour and texture vary by batch. How do people enjoy it? On its own from the spoon, or stirred into a drink that has cooled below 40 °C. Never more than 5 g a day – less than one level teaspoon.
How much can I eat? Up to 5 g a day – less than one level teaspoon. For adults only. Do not exceed this amount. Do you have a measuring spoon? Yes, our bamboo honey spoon. Whichever spoon you use, keep to up to 5 g a day. What happens if I eat more than 5 g? It can cause dizziness or light-headedness, nausea, cold sweats and low blood pressure (weakness, feeling faint). If that happens: don't eat any more, drink water and rest. If symptoms are severe or don't improve, call 112 or see a doctor.
Not recommended for children, during pregnancy or breastfeeding, for people with heart or blood pressure conditions, or if allergic to honey. For adults only. Taking medication? Ask your doctor first.
Why does every batch look and taste different? We don't blend our honey to a standard taste. It is wild-harvested from high-altitude cliffs, so colour, flavour and grayanotoxin content differ by region, season and batch. The main harvest is in spring (April to May), sometimes followed by a second harvest in autumn (October to November). That's why every batch gets its own lab report, while the limit stays the same: never more than 5 g a day.
Where does your honey come from? We source through trusted partners in Nepal, connected to Himalayan honey-hunter communities, and in Turkey's Black Sea region. Learn more about how we source our honey here. Do you buy bulk honey and relabel it? No. Our sourcing is relationship-based. Do you publish lab reports? Yes, per batch, with the measured grayanotoxin content (GTX I and III). What happens if a batch doesn't meet your specification? We don't buy it. What are red flags when buying mad honey? No batch lab reports, vague "Himalayan" origin claims, promises about effects or strength, no clear maximum amount, unrealistic harvest timelines and no satisfaction guarantee.
